Bleck that sounds terrible.
Jesse did fix some shapefile related problems for uDig 1.1.1 - can you download and let us know if your problem still exists. The last time I saw this kind of behavior was when uDig having trouble when a DBF file contained two columns with the same name (ie it was invalid) and we were able to provide a fix.

My test case:
- On the map, select feature for editing, edit feature
- Commit edit => Element disappears, other map content still shown (as only relevant bounds are refreshed)
- Refresh map e.g. by panning => Content disappears
- Open table view => Shows only one element.
Anyone got similar results? I wonder if it's the SHP, as it's not generated by uDig. But how do I check the SHP?
