I have been working on a styler that will add rules to the SLD based on the current selection. It is based on the SLD Styler that exists in uDig but was disabled do to some bugs (apparently, I haven't seen them). Right now it copies the filter used by the selection which is a geometry filter.

It sounds like you want something more like Jesse is describing where the styles are automatically generated, but perhaps this would be easier than editing the SLD by hand. The current version is based on trunk, but I think it should work for 1.0.x as well. It is in SVN at http://svn.geotools.org/udig/trunk/community/cole/org.tcat.citd.sim.udig.style.selection
