[udig-devel] Update to GEF, EMF etc...

A new version of the quickstart is available, along with:
- GEF 3.1
- EMF 2.1
- Eclipse 3.1 and Test Framework 3.1
- Latest Subclipse (for those who care)
- Java 5.0.0_04 with JAI, ImageIO

If I could once again ask people to report back how long this takes.

Note: when upgrading you can leave your workspace as is (you will not 
need to checkout udig again).
