This is probably the problem I've been reporting for quite a while
(since I first used udig - 0.5).  Udig doesnt make proper WFS requests,
so it would certainly explain why your server's arent working.

I've spent time with several of the udig developers; its apparently now
fixed.  Hopefully they'll test it on your services before the next
release.
