I got that working, is the installer available in ppc64le? I am currently using the SDK, is that the best practice or should I be running some other version of eclipse?

Where did you get your Eclipse from? If you use the installer and installed "Eclipse IDE for Java Developers" (or downloaded it as a zip/tar) for the latest release (2023-03) you get a new Gradle Project in the new project wizard provided by the Eclipse Buildship project:
