There was a bug in Mapserver WFS that in DescribeFeatureType it would state it would have polygons only, but then in the GML there would also be multipolygons. I have setup uDIG against a correctly functioning Mapserver WFS (changed source code and rebuild) and a Mapserver WFS with this flaw.

Cadcorp SIS Mapbrowser gives an error message that multipolygons are not allowed in that GML according to the schema. uDIG just keeps on rendering, at least the progess bar keeps on running. It does draw a few polygons.

Incorrect Mapserver WFS:
http://www.vz.geodan.nl:1111/cgi-bin/mapserv.exe?map=/ms4w/apps/general/map/world_invalid.map&;

Correct Mapserver WFS:
http://www.vz.geodan.nl:1111/cgi-bin/wfstest/mapserv.exe?map=/ms4w/apps/general/map/world.map&;

I would suggest that this bug will be fixed soon, as I can't guarantee that this services will remain online for long .....
