I found the problem.

Do
0) mkdir temp;cd temp
1) unzip eclipse RCP
2) cd eclipse
3) unzip udig 0.8 RC1 -> overwrite config file
4) unzip udig 0.8 -> overwrite all the files

-> you get a working 0.8

The udig 0.8 zip doesn't have the extra org.eclipse plugins.
