After following your suggestion, I have successfully added sidewalk lanes through the command line. Thanks! :)
Regarding my question about the length of sidewalks, I have attached a screenshot of one of the junctions of the grid I generated.
I just observed that the sidewalks extend to the roads (sidewalk lanes terminate at the middle of the road). I intend to put pedestrian crossings on some junctions of the grid. To do this, I understand that a sidewalk needs to be in place first before adding the crossing. In that case, my understanding is that I have to extend the relevant sidewalk lanes so that they are connected at the junctions (to be able to add the crossing after). Is this correct? And how do I modify the length of sidewalk lanes?

1) you need to add the option --sidewalks.guess to enable guessing (the min-speed option only configures the heuristic).
2) The length of the sidwalk is automatically adjusted after recomputing geometries (F5) or saving the network. If the length is wrong after that, please explain the problem in detail (with an anotated screenshot).
