Hi Marco,

the key binding to freeze the rows/columns above the current selection is 
Ctrl+Shift+F, to unfreeze Ctrl+Shift+U.
The actions are not (yet) common Eclipse commands, that means that it is not possible to change the key bindings and no other command must be assigned to the keyboard shortcut.
