Hi Gregor,
GlassFish can now be considered more of a reference implementation than anything else, as it doesn't come with support from any vendor. If you like GlassFish, I'd recommend you to take a look at Payara (
https://www.payara.fish), which was originally derived from GlassFish 4, uses most of the same components and is very similar to administer. Payara claims to be compatible with Java EE 8 (although it's not certified) and they have plans to certify for Jakarta EE as soon as they can.

Hi!
Now that GlassFish 5.1 is released I have one question.
Is is considered production ready or just an reference implementation? Will new releases be released regularly, like quarterly, when major bugs are discovered, ... ?
I've been using GlassFish since version 3 and like it.
