There are a lot of visitors we could handle through stats here: https://github.com/geotools/geotools/tree/23.1/modules/library/main/src/main/java/org/geotools/feature/visitor
Currently we handle min/max/bounds: https://github.com/locationtech/geomesa/blob/geomesa_2.11-3.0.0/geomesa-index-api/src/main/scala/org/locationtech/geomesa/index/geotools/GeoMesaFeatureCollection.scala#L229

I believe we also intercept count somewhere else...
