Docs - converters - include details on handling json arrays of objects

We should be at least able to handle arrays of complex objects by turning them into strings and storing them as json-type string attributes. Verify with a unit test, and add a note to the docs.

James Srinivasan reported that the attribute type had to be a ListString, which doesn't match the behavior I would expect, which is that it would have to be a regular String.
