current latest docs (2.7?) should be copied over to 3.0 and here we

* javax to jakarta
* Java EE to Jakarta EE
* references to other technologies (jaxb, jaxws, jaxrs etc) with their
new names (Jakarta XML Binding, Jakarta XML Web Services, Jakarta
RESTful Web Services etc)
we basically have to make sure that our docs follow
https://jakarta.ee/legal/acronym_guidelines/
that is likely the most important thing on the docs side which has to be
done.
