I have updated the bug you filed for
this problem:  https://bugs.eclipse.org/bugs/show_bug.cgi?id=126605

Currently, there is no way to override
the default "process" console - there is only a way to provide
custom coloring via the "consoleColorProviders" extension point.
Marking as enhancement request to be able to override console creation.
