regarding your questions:
1.) Yes - there is a BPEL EMF model. You can access it from the BPEL CVS
(see document from Link 2)
2.) The article at http://www.eclipse.org/bpel/users/howto/ode.php shows
how to integrate with the Apache ODE runtime, however, basically you can
potentially use any runtime that understands BPEL 2.0

Those questions would be better addressed by the BPEL project committers,

2) Which BPEL engines are supported? I presume most BPEL engines should
work but I would like to know the one that is the "default" for Eclipse
projects if there is one.
