I just started using the VE this morning, but I am already confronted
with a limitation I did not expect. But maybe it is not a limitation at
all and am I just using the VE the wrong way.
I thought I could use VE to put components on a composite. So I started
by creating a class which extends Composite, which I then opened with
the visual editor. But then I was not able to put any components on my
composite. I had to start with a Shell on which I was then able to all
the components I wanted and change their properties.
But that is not exactly what I wanted to do. I would like to create
parts (as Composites) of a window (shell) with the visual editor and
then, based on certain user preferences, put several of those 'parts'
together on 1 shell. Is it possible to start of with the VE from a
composite instead of having to create a shell in every 'visual class'?

There are two possibilities, one is your are installing into a
configuration after you had customized the perspective. Customized
perspectives don't always show the new shortcuts near the top. Or the
second is your perspective is not the Java or Java Browsing perspective.
The shortcuts are only added to those perspectives because you normally
would only be doing java developement from those perspectives.

Instead of creating the composite by hand first, use the New->Visual
Class wizard instead, and choose the style SWT->Composite. This will
make sure everything about the project and the class are set up correctly.

Actually, that was part of my problem. I was not able to find the
'File->New->Visual Class' wizard in the menu, so I tried things by hand.
But I had not been looking very well. I found it in
'File->New->Other->Java->New Visual Class'.
Would this be because I am working in the PDE (I'm working on a RCP
application), or is it an error in the VE help?
Anyway. Thanks for the help Rich. Works perfectly now.
