I have found that the best way to learn both how to use eclipse and how to
extend it with your own plugins is through the book called The Java Developers
Guide to Eclipse (2cnd edition). It is, by far, the most comprehensive resource
available. There is also a book called The Definitive Guide to SWT and JFace
which does a great job of teaching how all the view controls work.
