In Eclipse 3.2, Open Preferences and type ‘color’ in the search box.
Lots of possibilities. In 3.1, you’ll have to browse manually.

Window -> Preferences.
PHPEclipse -> PHP.
Syntax tab.
You can highlight the _kind_ of statement/item in the Foreground box,
then choose the syntax color in the Color box.
