Is it possible to link editor sessions to a particular project so that
when I select a new project all the editor windows for the previous
project are closed and the editor sessions for the new project are
re-opened?

Chris,
There's no such feature provided directly by the IDE. It sounds
horrible too, but that's just my opinion. Perhaps you just want to hide
the editors, not close them, but that's not supported either...

Closest thing you can get is the Mylyn Task focused UI, but that links
Editors to Tasks, not particularly projects.

You can also use separate workspaces and run multiple copies of Eclipse.
An even lighter-weight solution would be to open multiple Workbench
windows (Window > New Window), each of which manages its own set of open
editors, perspectives, and views.
Hope this helps,
Eric
