I assume you are talking about in the Package Explorer view.
If you use the Java Browsing perspective, the Packages view will show a
consolidated view of the packages from all source folders.

If you really want to stick with Package Explorer, I suggest searching
Bugzilla to see if a similar request exists. If not, enter one yourself.

Yes I want to use the package explorer e.g. because I like the
displaying of grouped working sets...

Also, the browser will not show packages across multiple projects.
