How do I upgrade WTP to the latest RC (from M5)?

There isn't an upgrade path for milestone releases. To move to RC1 you
will need to follow the installation instructions to install WTP from
scratch. After installing WTP RC1 you should still be able to open your
existing workspace.

Is there a way to uninstall M5? Do I need to do that at all, or can I just
install RC1 on top of M5?

It is fairly pathetic that Eclipse provides no way to do this
automatically, since the algorithm for choosing which plug-ins to run is
automatic and well-known. But that's the way it goes.

Looked at another way, this is an excellent opportunity for an
EclipseCleaner plug-in! Go for it.
