You want 'Sort by Name' in Projects view as it is in Navigator view.
Although CDT Help in its related ref. entry says this exists, I don't
see it in Project View's menu.
Either this is a bug, or CDT Help is wrong.
(comments based on platform 3.0, cdt 2.0.1)
