Probably not. WSAD is not running on top of Eclipse 2.1 yet, so WSAD
plugins will very likely break when you try to move them over. There
were some public API changes between 2.0 and 2.1, and WSAD is likely
calling some internal API which has also been changed. In short, you can
try, but expect failure.

It is not "most likely will not work". It is a definite, with no
exception, will not work. The next WSAD that works on Eclipse 2.1.1 is
in process. As per usual IBM policy, no dates are permitted to be given
out until the proper time.
