Never mind, I found it in
org.eclipse.ui.editors.text.EditorsUI.DEFAULT_TEXT_EDITOR_ID
[I spend at least 15 minutes looking before I asked, but 30 seconds
after posting the question I spotted a reference to EditorsUI in some
code that I had opened. Argh...]
