Hello. I am working on setting up a pub/sub architecture using the mosquitto broker in the MQTT Sparkplug B format. The broker is established and the message is published. However on the subscriber's end, the payload is not shown ni the object format as we would expect from the SparkplugB based MQTT protocol. The payload snapshot is attached along with this email. Please help me with it and thank you.

Sparkplug B is binary, so if your display program does not know how to decode it, that's what you get.
See https://mqttlab.iotsim.io/sparkplug for a couple of subscriber clients that understand it.
